These are great plain or with your favorite sauce.
Ingredients
- 2 lbs. chicken wings
- 1 Tbsp baking powder
- Salt & Pepper to taste
Optional Spice Mixes
- Mix #1: 2 tsp each: paprika, chili powder, garlic powder, onion powder, cumin, thyme
- Mix #2: 1 tsp dried oregano, 1 tsp dried rosemary, 1/2 tsp ground cumin, 1 tsp kosher (or 1/2 tsp table salt)
Directions
- Preheat oven to 450F
- Dry chicken with paper towel and place in a large bowl. Sprinkle with baking powder, salt, and pepper, optional spice mix if using, and toss until evenly covered.
- If using, toss with desired spice mix until evenly covered.
- Line baking sheet with foil then parchment paper (can use a cooling rack if preferred, just spray with Pam or similar to keep from sticking)
- Place chicken in baking sheet leaving space between
- Place baking sheet in oven, switch oven to convection and lower to 425F
- Bake for 30 minutes (if using convection)
- Let wings rest for 5 minutes
