Crispy Baked Chicken Wings

These are great plain or with your favorite sauce.

Ingredients

  • 2 lbs. chicken wings
  • 1 Tbsp baking powder
  • Salt & Pepper to taste

Optional Spice Mixes

  • Mix #1: 2 tsp each: paprika, chili powder, garlic powder, onion powder, cumin, thyme
  • Mix #2: 1 tsp dried oregano, 1 tsp dried rosemary, 1/2 tsp ground cumin, 1 tsp kosher (or 1/2 tsp table salt)

Directions

  1. Preheat oven to 450F
  2. Dry chicken with paper towel and place in a large bowl. Sprinkle with baking powder, salt, and pepper, optional spice mix if using, and toss until evenly covered.
  3. If using, toss with desired spice mix until evenly covered.
  4. Line baking sheet with foil then parchment paper (can use a cooling rack if preferred, just spray with Pam or similar to keep from sticking)
  5. Place chicken in baking sheet leaving space between
  6. Place baking sheet in oven, switch oven to convection and lower to 425F
  7. Bake for 30 minutes (if using convection)
  8. Let wings rest for 5 minutes
