Low Carb Crockpot Chicken Dijon

This is great for low carb diets. Don’t care about carbs? Pour the chicken and sauce over whole grain rice.

Ingredients

  • 4 Chicken thighs without skin
  • 3 Tbsp. olive oil (or any other)
  • 4 cloves garlic, minced
  • 6 Tbsp. dry white wine
  • 4 Tbsp. low sodium soy sauce
  • 4 Tbsp Dijon mustard

Directions

  1. Heat oil in a skillet. Add chicken and brown.
  2. Add minced garlic and cook 3 more minutes, stirring often
  3. In a separate bowl, combine wine, soy sauce, and mustard and mix well
  4. Pour generously over chicken. Put all in a crockpot and cook for 5 hours on low

  1. This was great! Made a couple small changes since I didn’t want go to the store.

    – Swapped chicken thighs for breasts
    – Used 3 parts yellow mustard and one part old fashion Dijon
    – Added just a bit more wine and soy to combat the lack of fat in the meat
    – Cooked on low for 4 hrs – so as to not dry out breasts
