Roasted Beet Salad!

When beets are in season, try this recipe. If you don’t like beets, you must be eating the canned beets!  Roast them fresh and try this!  This recipe is for four people.

Ingredients

Beets prep
  • 2 large beets (not peeled)
  • dash of salt
  • drizzle of olive oil
Spring salad mix & dressing
  1. honey roasted almonds (or any nut you prefer)
  2. 2 oranges (zested and juiced)
  3. blue cheese or shredded parmesan cheese
  4. 2 oz olive oil
  5. Pepper to taste

Directions

Beets
  1. Put them on a tinfoil-covered baking dish.  Slightly drizzle with olive oil and sea salt. 
  2. Heat on 275 degrees for 2 hours. 
  3. Remove and peel the beets when they come to room temperature.
Salad
  1. Plate the spring mix greens.
  2. Cut beets into rings and top salad. 
  3. Lightly crush nuts and sprinkle over salad. 
  4. Top with blue or parmesan cheese. 
  5. Whisk olive oil, orange zest, orange juice, and fresh pepper. 

Note: Use any extra orange as garnish.
