These easy pumpkin bars are full of fall flavor with a moist texture and a decadent cream cheese frosting.
Ingredients
Bars
- 4 large eggs, room temperature
- 1 2/3 cups sugar
- 1 cup vegetable oil
- 15oz. can pumpkin
- 2 cups sifted AP flour
- 2 tsp baking powder
- 2 tsp ground cinnamon
- 1 tsp salt
- 1 tsp baking soda
Icing Ingredients
- 3oz. cream cheese, softened
- 1/2 cup butter, softened
- 2 cups sifted confectioners’ sugar
- 1 tsp vanilla
Directions
Bars
- Preheat oven to 350 degrees
- Mix at medium speed: eggs, sugar, oil, and pumpkin
- Stir together flour, salt, baking powder, cinnamon and baking soda
- Add dry ingredients and mix at low speed until smooth
- Spread into greased 13×10 pan
- Bake for 30 minutes and cool
Icing
- Combine cream cheese and butter at medium speed
- Add sugar at low speed, then vanilla
- Spread on bars
