Ingredients
Crust
- 1/2 cup oleo (butter)
- 1/4 cup powdered sugar
- 1 cup flour
Filling
- 2 eggs, beaten
- 2 Tbsp. lemon juice
- 1/4 tsp. lemon extract
- 1 cup granulated sugar
- 2 Tbsp. flour
- 1/2 tsp. baking powder
Icing
- 1/2 cup powdered sugar
- heavy cream
Directions
Crust
- Mix ingredients & press into oiled 8″ square pan.
- Bake for 12 minutes at 350 degrees
Filling
- Mix ingredients and pour over crust.
- Bake for 25 more minutes at 350 degrees.
- While baking, make Icing
- Cool slightly and frost with thin layer of icing to form a glaze
