Ingredients
- 4 lbs. red potatoes
- 1/2 cup olive oil
- 2 garlic cloves
- 2/3 cup heavy cream
- 1/4 cup butter (I double this)
- 2 tsp salt
- 3/4 cup whole milk
- 3 green onions
- 3/4 cup parmesan cheese
Directions:
- Place potatoes in pot. Cover with water and bring to a boil. Reduce heat and cook uncovered for 15-20 minutes.
- Place oil and garlic in food processor until blended.
- Drain potatoes and mash, gradually adding cream, butter, salt, pepper and enough milk for desired taste.
- Stir in green onions and cheese.
Serve with garlic oil if desired.
