Red-Skin Mashed Potatoes

Ingredients

  • 4 lbs. red potatoes
  • 1/2 cup olive oil
  • 2 garlic cloves
  • 2/3 cup heavy cream
  • 1/4 cup butter (I double this)
  • 2 tsp salt
  • 3/4 cup whole milk
  • 3 green onions
  • 3/4 cup parmesan cheese

Directions:

  1. Place potatoes in pot. Cover with water and bring to a boil. Reduce heat and cook uncovered for 15-20 minutes.
  2. Place oil and garlic in food processor until blended.
  3. Drain potatoes and mash, gradually adding cream, butter, salt, pepper and enough milk for desired taste.
  4. Stir in green onions and cheese.

Serve with garlic oil if desired.
