Ingredients
- 4 lbs. lean steak like sirloin tip roast (sliced to preferred thickness – 1/4″ recommended)
- 4 Tbsp onion powder
- 1 1/3 tsp black pepper
- 1.5 tsp garlic powder
- 2 pinches of salt
- 1 cup Worcestershire sauce
- 1 cup Soy sauce
- 1 tsp cayenne pepper
- 1 tsp red pepper flakes
Directions
- Trim fat from meat
- Mix all ingredients (except meat) together
- Place sliced meat and marinade in a plastic bag and seal. Mix meat around to ensure full coverage
- Let sit in refrigerator overnight
- Place meat on smoking rack and in smoker
- Use ~2oz wood and cook at 145 degrees until desired dryness is achieved (approximately 5+ hrs)
