Beef Jerky – Spicy

Ingredients

  • 4 lbs. lean steak like sirloin tip roast (sliced to preferred thickness – 1/4″ recommended)
  • 4 Tbsp onion powder
  • 1 1/3 tsp black pepper
  • 1.5 tsp garlic powder
  • 2 pinches of salt
  • 1 cup Worcestershire sauce
  • 1 cup Soy sauce
  • 1 tsp cayenne pepper
  • 1 tsp red pepper flakes

Directions

  1. Trim fat from meat
  2. Mix all ingredients (except meat) together
  3. Place sliced meat and marinade in a plastic bag and seal. Mix meat around to ensure full coverage
  4. Let sit in refrigerator overnight
  5. Place meat on smoking rack and in smoker
  6. Use ~2oz wood and cook at 145 degrees until desired dryness is achieved (approximately 5+ hrs)
