No-Butter Chicken!

This recipe is surprisingly delicious given that there is no cream or butter in this butter chicken recipe.

Ingredients

  • 2 tbsp. olive oil
  • 1 small red onion, chopped
  • 4 chopped fresh garlic cloves
  • 1 tbsp. chopped fresh ginger
  • 2 tbsp. tomato paste
  • 1 tbsp. brown sugar
  • 1 tbsp. cumin powder
  • 2 tbsp. garam masala
  • 1 tsp. red chili flakes
  • 1 1/2 teaspoons turmeric
  • 1 tsp. salt
  • 4 chicken thighs or 2 chicken breasts (boneless), cut into cubes
  • 1/2 cup low-fat yogurt
  • 1/2 cup water

Directions

  1. Put a large skillet over medium-high heat and add the oil.
  2. When it starts to get hot, add the onion, garlic, and ginger and cook for 4 minutes, or until the onion is golden.
  3. Add the tomato paste, brown sugar, cumin, garam masala, red chili flakes, turmeric, and salt and cook for 2 minutes.
  4. Add the chicken cubes and stir well to coat. Add the yogurt and water and cook, stirring until the chicken is done, about 8 minutes.

This serves 2 people.  Pour it over brown rice.
