This recipe is surprisingly delicious given that there is no cream or butter in this butter chicken recipe.
Ingredients
- 2 tbsp. olive oil
- 1 small red onion, chopped
- 4 chopped fresh garlic cloves
- 1 tbsp. chopped fresh ginger
- 2 tbsp. tomato paste
- 1 tbsp. brown sugar
- 1 tbsp. cumin powder
- 2 tbsp. garam masala
- 1 tsp. red chili flakes
- 1 1/2 teaspoons turmeric
- 1 tsp. salt
- 4 chicken thighs or 2 chicken breasts (boneless), cut into cubes
- 1/2 cup low-fat yogurt
- 1/2 cup water
Directions
- Put a large skillet over medium-high heat and add the oil.
- When it starts to get hot, add the onion, garlic, and ginger and cook for 4 minutes, or until the onion is golden.
- Add the tomato paste, brown sugar, cumin, garam masala, red chili flakes, turmeric, and salt and cook for 2 minutes.
- Add the chicken cubes and stir well to coat. Add the yogurt and water and cook, stirring until the chicken is done, about 8 minutes.
This serves 2 people. Pour it over brown rice.
