Filet Longhi

Ingredients

4 filets

3 TBSP extra virgin olive oil

2 cloves garlic chopped

1 oil packed anchovy, rinsed in water and minced

1 red bell pepper, cut into 1/4 inch strips

1 yellow bell pepper, cut into thin 1/4 inch strips

1 stick (1/2 cup) butter

1/2 cup chopped basil

Instructions

Remove beef from refrigerator at least 30 minutes before cooking. When the grill is hot, put on the filets. While they’re cooking, add olive oil to a sauté pan and sauté the garlic for 30 seconds. Add the minced anchovy and then the peppers; sauté until the peppers are soft. Turn the filets only once while cooking.

When the steaks are cooked to the desired temperature, take them off the grill. Melt the butter in a saucepan over medium heat. When butter is foamy, add chopped basil and cook for 30 seconds. Remove from heat.

Cut the filets on the bias into 1/4 inch slices and fan out on 4 plates. Pour sauce over steaks. Place sauteed peppers to the side of the steak.
