Buy or make your favorite keto sliced bread. Slice the bread into cubes. Heat your oven to 350 degrees and dry out the bread cubes (10-15 minutes).
While the bread cubes are drying out in the oven mixture, make the pudding mixture:
- 1 cup Heavy cream
- 1 1/2 cups unsweetened almond milk
- 3 large Eggs
- 1/3 cup Besti Monk Fruit Allulose Blend
- 1/4 cup Unsalted butter (melted)
- 1 tsp Vanilla extract
- 1 tsp Cinnamon
- 1/2 cup of dried fruit of your choice (optional)
Add the bread cubes to an 8 x 8 pan.
- In a medium bowl, whisk the heavy cream, eggs, Besti, melted butter, vanilla, and cinnamon together.
- Pour the egg mixture over the bread cubes and lightly stir, until all pieces of bread are coated and soaking up the mixture.
- Fold in the sugar-free dried cranberries.
- Bake for 35-40 minutes, until lightly browned.
