Italian Sausage Soup

A thick soup or thin stew. This makes a hearty yet simple meal.

Ingredients

  • 4 cans chicken broth
  • 2 pounds ground Italian sausage
  • 1-2 cans Italian tomatoes or plain, whatever you like (this soup is very forgiving)
  • 1-2 cans white beans or pinto, cannellini, again, whatever you like or have on hand
  • 3-4 carrots diced
  • 3-4 celery stalks, diced
  • 1 onion, chopped
  • 1 Tbs Italian Seasoning
  • Salt to taste
  • Shredded Parmesan cheese for serving
  • Optional – 1 or 2 Tbsp tomato paste just to give it a bit more depth

Directions

  1. In a large pan or Dutch oven, Brown and chop the sausage. Drain off the fat.
  2. Add remaining ingredients and bring to a simmer.
  3. Simmer for 1 hour. This can be left to simmer for several hours for serving flexibility.
