A thick soup or thin stew. This makes a hearty yet simple meal.
Ingredients
- 4 cans chicken broth
- 2 pounds ground Italian sausage
- 1-2 cans Italian tomatoes or plain, whatever you like (this soup is very forgiving)
- 1-2 cans white beans or pinto, cannellini, again, whatever you like or have on hand
- 3-4 carrots diced
- 3-4 celery stalks, diced
- 1 onion, chopped
- 1 Tbs Italian Seasoning
- Salt to taste
- Shredded Parmesan cheese for serving
- Optional – 1 or 2 Tbsp tomato paste just to give it a bit more depth
Directions
- In a large pan or Dutch oven, Brown and chop the sausage. Drain off the fat.
- Add remaining ingredients and bring to a simmer.
- Simmer for 1 hour. This can be left to simmer for several hours for serving flexibility.
