Ingredients
- 1 2-6 bone Prime Rib
- 3 Tbsp olive oil
- 3-4 cloves garlic (sliced or minced) (optional)
Directions
- Remove prime rib from refrigerator 4 hours prior to cooking
- Just before cooking, bone and tie the ribs (optional)
- Cut 1/2″ slits on the top of the roast and insert sliced/minced garlic, if using
- Rub outside of roast with olive oil
- Apply any rub to the roast
- Pre-heat oven to 500F
- Transfer roast to a roasting pan bone side down
- Insert thermometer into center of roast and place in oven (2nd rack from bottom)
- Cook for 5 minutes per pound of the roast (round up)
- After the calculated time, turn off oven but do NOT open the oven door
- After 2hrs. the roast should be 135F, remove and let rest for 10 min. Let the thermometer be the real guide vs. the timing.
Rub option
- 1 Tbsp dried Tyme
- 1 Tbsp dried Rosemary
- 1 Tbsp Black Pepper
- 1 Tbsp Onion Powder
- 1 Tbsp Garlic Powder
- 2 Tbsp Kosher salt
Note: If you want to let the roast rest 20-25 minutes, pull it from the oven at 121F and it will get to ~135F during that time.
