Gingerbread Cake

Ingredients

  • 4 oz unsalted butter plus extra for buttering pan
  • 1/2 cup brown sugar
  • 1/2 cup light molasses
  • 2 large eggs
  • 1 1/2 cup all-purpose flour
  • 1/2 tsp baking soda
  • 2 tbsp ground ginger (or taste)
  • 1 tsp cinnamon
  • 1 tsp ground cloves
  • 1/4 tsp ground allspice
  • 2 tsp vanilla extract
  • 1/2 cup buttermilk

Directions

  1. Heat oven to 350 degrees. Butter a 9-inch cake pan and set aside.
  2. Cream remaining 4 oz butter with brown sugar. Beat until fluffy, add molasses, then beat in the eggs.
  3. Add flour, baking soda, ground ginger, cinnamon, cloves and allspice
  4. Add vanilla extract and buttermilk then turn into pan
  5. Bake for 25-30 min (check at 25). Cool on rack.
