Enchilada Sauce

Makes: 16 oz. of sauce

Ingredients

  • 1/4 cup vegetable oil (or olive or avocado oil)
  • 2 Tbsp flour
  • 1/4 New Mexico or California Chili powder
  • 1 8 oz. can tomato sauce
  • 1 1/2 cups chicken broth (alternatively, use water)
  • 1/4 tsp ground cumin
  • 1/4 tsp garlic powder
  • 1/4 tsp onion powder
  • 1/4 tsp salt

Directions

  1. Heat oil in a saucepan on medium-high heat. Stir in flour and chili powder, reduce heat to medium and cook until lightly brown, stirring constantly
  2. Stir in tomato sauce, broth, cumin, garlic and onion powder until smooth
  3. Continue cooking for approximately 10 minutes or until desired thickness
