Black Bean Burger

This is a tasty vegetarian burger.

Ingredients

  • ½ can black beans, rinsed and drained
  • ½ can corn, rinsed and drained
  • ¼ cups yellow onion, grated
  • 3 garlic cloves, minced
  • 1/3 cups breadcrumbs
  • ¼ loaf focaccia
  • ½ Roma tomato, sliced
  • Salad mix (optional)
  • Burger condiments
  • Salt
  • Pepper

Directions

  1. In a blender or food processor, blend corn, onion, garlic, breadcrumbs, salt and pepper until just combined
  2. In a bowl, add the black beans and blender mixture and mash together until mixed and desired texture
  3. Form 2 burger patties
  4. Heat oil over medium heat in a pan and cook burgers 8-10 minutes flipping about halfway through or bake at 350 degrees for 20 minutes
