Ingredients
- 4 medium fresh ripe tomatoes
- 1 small bunch of cilantro (approximately 10 pieces)
- 1 fresh lime (juiced)
- 3 chipotle chilies canned in adobo sauce
- 1 white onion
- 1.5 Tsp each salt & pepper (or to taste)
- 3 garlic cloves, minced (optional)
- Red pepper flakes to taste (optional)
Directions
- Wash and core tomatoes
- Wash and dry cilantro
- Peel onion. Cut tomatoes and onion into quarters and put into processor
- Remove stems & seeds from chipotles and add to processor
- Add a tablespoon or two of adobo sauce to the mix for extra smokey flavor
- Process ingredients until desired consistency
Let sit overnight to let flavors blend.
