Beef stew

A great and easy recipe for those chilly nights.

Ingredients

  • 2 lbs. cubed stewing beef
  • ~15 baby carrots or more, halved
  • 1/2 Cup dried minced onion
  • 3 Large potatoes, cubed
  • 1 can (10 3/4 ounces) tomato soup
  • 1 soup can water
  • 2 tablespoons vinegar (any will do)
  • 1 Tsp each salt and pepper (or to taste)

Optional Changes

  • Replace potatoes with double the carrots
  • Replace minced onion with one fresh onion (chop or dice)
  • Replace 1 soup can of water with chicken broth or stock
  • Add ~4 celery sticks
  • Add 2 Tbsp crushed garlic (minced + powder works as well)
  • Add 2 Tbsp Italian seasoning
  • Add 1 Tbsp tomato paste

Directions

  1. If using onion, sauté in pan with oil
  2. Combine all ingredients in 3.5 to 5-quart slow cooker layering bottom with carrots, potatoes and/or celery.
  3. Heat on high for 5-6 hours or low 10-12 hrs.

Makes 4-6 servings.
