This dish can be served in a bowl or wrapped in a big soft tortilla for homemade burritos.
Ingredients
- 1 lb. boneless, skinless chicken breasts
- 2 Tbsp olive oil
- 3 Tsp onion powder
- 2 Tsp garlic powder
- 3 Tsp chili powder
- 2 Tsp cumin
- Salt & Pepper to taste
- 3 Cups low-sodium chicken broth
- 1 15 oz. can diced tomatoes, drained
- 1 14 oz. can black beans, drained and rinsed
- 2 3/4 Cups instant whole grain brown rice
- Optional: shredded jack cheese, green onions, avocado, sour cream
Directions
- Place chicken breasts in slow cooker
- Pour chicken broth over chicken and stir in tomatoes, olive oil, onion powder, garlic powder, chili powder, cumin, salt and pepper
- Cook on low for 4 hours
- Remove chicken from slow cooker
- Turn slow cooker to high and stir in instant rice and black beans; Cook for 30 minutes
- While rice and beans cook, cut chicken breasts into cubes (or shred)
- Add chicken back in and cook for 20 min. or until chicken is warm
- Serve with fresh diced tomatoes, green onions, avocados, etc.
