An amazing soup that is full of flavor and easy to make.
Ingredients
- 1.5 lbs. stew meat
- 4 cans chicken broth
- 1 container of chopped onions/carrots/celery mix (Trader Joes) – not drained
- 1 can chopped Italian tomatoes
- 1 Tbsp. of Italian Seasoning
- 2 Tbsp. crushed jarred garlic or a couple of cloves fresh garlic
- 1 Tsp. salt
- 1 Tsp. pepper
- 1 can black beans rinsed and drained – added to soup at the end.
Directions
- Place stew meat in bottom of pan and generously salt & pepper (no browning needed).
- Add all other ingredients and cook on low for 2 hours with lid on.
- Once simmered, degrease the top of the soup with a spoon.
- Remove the pieces of meat and cut off any fat and break into smaller pieces and put back in soup.
- Add the black beans and simmer to warm up the beans, then serve.
