Vegetable Beef Soup

An amazing soup that is full of flavor and easy to make.

Ingredients

  • 1.5 lbs. stew meat
  • 4 cans chicken broth
  • 1 container of chopped onions/carrots/celery mix (Trader Joes) – not drained
  • 1 can chopped Italian tomatoes
  • 1 Tbsp. of Italian Seasoning
  • 2 Tbsp. crushed jarred garlic or a couple of cloves fresh garlic
  • 1 Tsp. salt
  • 1 Tsp. pepper
  • 1 can black beans rinsed and drained – added to soup at the end.

Directions

  1. Place stew meat in bottom of pan and generously salt & pepper (no browning needed).
  2. Add all other ingredients and cook on low for 2 hours with lid on.
  3. Once simmered, degrease the top of the soup with a spoon.
  4. Remove the pieces of meat and cut off any fat and break into smaller pieces and put back in soup.
  5. Add the black beans and simmer to warm up the beans, then serve.
