Sun Dried Tomatoes

Sun dried tomatoes in an oven.

Ingredients

  • 1lb Tomatoes
  • Sea salt
  • 1 Tbsp olive oil (optional)
  • Italian seasoning (optional)

Directions

  1. Preheat oven to 225 degrees. Line a baking sheet with parchment paper (don’t use foil)
  2. Slice tomatoes in half and cut out the core at the top
  3. Arrange tomatoes in a single layer on the baking sheet, cut side up, and sprinkle with salt
  4. Bake for 2 1/2 hrs. Press down on the tomatoes with spatula (juice will come out)
  5. Return to the oven and back for at least 2 more hours, until tomatoes are dry but still pliable

Store

  • If you like, drizzle with olive oil and sprinkle with Italian seasoning
  • Store in the refrigerator for up to 1 week without oil, or up to 3-4 weeks submerged in oil
