Jalapeno Poppers

An easy popper recipe that doesn’t include bacon.

Ingredients

  • 12 jalapeños – There is enough filling for more
  • 6 oz. cream cheese softened
  • 1 Tsp garlic powder
  • 4 oz. sharp cheddar cheese shredded
  • 1/2 Tsp Smoked paprika
  • 2 Tbsp chopped fresh chives (optional)
  • ¼ cup Panko breadcrumbs or crushed Chicharrón or a low carb version
  • 1 Tbsp melted butter. If using Chicharrón, then don’t use the butter.

Directions

  • Preheat the oven to 400°F.
  • Wearing gloves, slice the jalapenos in half lengthwise. Using a small spoon, scoop out the seeds and membranes. Alternatively, slice off 1/3 and scoop the 2/3 section for filling.
  • In a bowl mix cream cheese, garlic powder, cheddar cheese, smoked paprika, and chives (if using).
  • In a separate bowl, combine Panko or Chicharrón crumbs and melted butter (if using).
  • Fill jalapenos with the cheese mixture. Top with crumbs.
  • Place on a baking pan and bake 18-22 minutes or until golden.
  • Cool 5-10 minutes before serving.
