An easy popper recipe that doesn’t include bacon.
Ingredients
- 12 jalapeños – There is enough filling for more
- 6 oz. cream cheese softened
- 1 Tsp garlic powder
- 4 oz. sharp cheddar cheese shredded
- 1/2 Tsp Smoked paprika
- 2 Tbsp chopped fresh chives (optional)
- ¼ cup Panko breadcrumbs or crushed Chicharrón or a low carb version
- 1 Tbsp melted butter. If using Chicharrón, then don’t use the butter.
Directions
- Preheat the oven to 400°F.
- Wearing gloves, slice the jalapenos in half lengthwise. Using a small spoon, scoop out the seeds and membranes. Alternatively, slice off 1/3 and scoop the 2/3 section for filling.
- In a bowl mix cream cheese, garlic powder, cheddar cheese, smoked paprika, and chives (if using).
- In a separate bowl, combine Panko or Chicharrón crumbs and melted butter (if using).
- Fill jalapenos with the cheese mixture. Top with crumbs.
- Place on a baking pan and bake 18-22 minutes or until golden.
- Cool 5-10 minutes before serving.
