Jalapeno Poppers

These make a great appetizer with a little heat.

Ingredients

  • 12 jalapeno peppers (< 3″)
  • 8 oz. Cream cheese softened
  • 1/4 cup chopped cilantro
  • 3 Scallions (~1/4 cup), whites & green parts, thinly sliced
  • 1 Garlic clove finely chopped
  • 1 Lime zested (~1/2 tsp) (optional)
  • 12 slices of thin bacon cut in half
  • Salt & Pepper

Directions

  1. Preheat oven to 400 F.
  2. Line a large baking sheet with foil and then top with a cooling rack.
  3. Halve the peppers lengthwise and scoop out the seeds with a spoon.
  4. In a medium bowl, mix cream cheese, cilantro, scallions, garlic, and a generous amount of salt and pepper.
  5. Season each side of the pepper with salt & pepper, then fill with cream cheese mixture (~2 tsp.). Should have a small mound.
  6. Wrap with bacon.
  7. Back for 25 minutes or until bacon is fully cooked.
  8. Broil for 2 minutes.
  9. Cool for 5 minutes.
