These make a great appetizer with a little heat.
Ingredients
- 12 jalapeno peppers (< 3″)
- 8 oz. Cream cheese softened
- 1/4 cup chopped cilantro
- 3 Scallions (~1/4 cup), whites & green parts, thinly sliced
- 1 Garlic clove finely chopped
- 1 Lime zested (~1/2 tsp) (optional)
- 12 slices of thin bacon cut in half
- Salt & Pepper
Directions
- Preheat oven to 400 F.
- Line a large baking sheet with foil and then top with a cooling rack.
- Halve the peppers lengthwise and scoop out the seeds with a spoon.
- In a medium bowl, mix cream cheese, cilantro, scallions, garlic, and a generous amount of salt and pepper.
- Season each side of the pepper with salt & pepper, then fill with cream cheese mixture (~2 tsp.). Should have a small mound.
- Wrap with bacon.
- Back for 25 minutes or until bacon is fully cooked.
- Broil for 2 minutes.
- Cool for 5 minutes.
