Low Carb Egg and Sausage Casserole

Ingredients

  • 10 eggs scrambled with a fork
  • 1 cup shredded cheddar cheese we like sharp cheddar
  • 1 teaspoon salt optional
  • 1 pound browned sausage (Jimmy Dean)
  • 2-8 slices bread cut into cubes & slightly dried or toasted
  • 2 cups milk or Half N Half for richer flavor

Instructions

  • Preheat oven to 350°F.  Grease 9×13 pan
  • Scramble eggs in a mixing bowl and then stir in milk.
  • Add remaining ingredients to mixing bowl and stir well, let sit for 2 minutes.
  • Pour into pan and bake for 30 – 45 minutes.
