Creamy Avocado Dip with Scallions

Ingredients

  • 1 tablespoon neutral vegetable oil
  • 3 large scallions, white and pale-green parts thinly sliced, dark-green parts trimmed, finely chopped
  • ¾ teaspoon kosher salt, plus more
  • 1 avocado, coarsely chopped
  • ¾ cup plain Greek yogurt

Tortilla chips or pita chips (for serving; optional)

Alternate: Sauté three chopped scallions, one chopped shallot and three cloves of chopped garlic until caramelized. Smash the avocado and add just one-half cup of non-fat yogurt, then blend in the cooled scallion mixture.

Directions

  1. Heat oil in a small saucepan over medium heat
  2. Add sliced scallions and a pinch of salt
  3. Cook, stirring frequently, until scallions just start to brown around the edges, about 3 minutes
  4. Transfer scallions and oil to a medium bowl
  5. Add avocado, yogurt, and remaining ¾ tsp. salt; stir to combine, lightly mashing avocado so mixture is slightly chunky
  6. Taste and adjust seasonings
  7. Top with finely chopped scallions
