Ingredients
- 4 large boneless chicken breasts
- 1/4 cup basil pesto
- 3 Tbsp. lemon juice
- Salt and pepper to taste
Directions
- Place chicken in an ovenproof baking dish. Add the pesto, lemon juice, season with salt and pepper.
- Massage the pesto sauce evenly on each chicken breast on both sides.
- Optional: 1. Let the chicken marinate for about 15 minutes at room temperature (while preheating your oven).
- Cover the dish with plastic wrap and put it in the fridge if decided to marinate the chicken breast for more than 30 minutes up to overnight.
- Preheat the oven to 425°F.
- Bake the chicken for about 20 to 25 minutes until it’s no longer pink inside or reaches an internal temperature of 165°F.
- Remove the chicken from the oven and let it rest in the baking dish for 7-10 minutes.
