Ingredients
- Turkey (any size)
- Olive oil or melted butter (enough to cover the bird)
- 1/4 cup of your favorite rub
- (optional) brine the turkey overnight
- (optional) inject turkey after spatchcocking
Directions
- Preheat the smoker to 150F
- Spatchcock the Turkey (cut out the backbone and flatten the turkey)
- Put the turkey skin side up on the smoker for about 15 min (this is for a little extra smoke flavor)
- Remove turkey, and increase the temperature to 400-450
- Rub oil or butter over both sides and apply rub
- Put a temperature probe in the thick part of the breast and put back on the smoker, skin side up and cook for 30 minutes
- Lower the smoker temperature to 325 and cook until probe reads 165F
- Remove from the smoker and let rest for 15-20 minutes
Longer version (3-4 hrs.) This version doesn’t require spatchcocking the turkey
