Sundried Tomato Chicken

Ingredients

  • 4 large chicken breasts
  • 1/4 – 1/2 c sundried tomatoes chopped (I used the kind in a jar w/oil, I think it adds more tomato taste)
  • 2 bricks cream cheese softened in the microwave for about 60 seconds (I like a lot of sauce and the chicken breasts I had were really large)
  • 1 Tbsp Italian seasoning
  • 1/2 Tbsp (or to your taste) crushed garlic
  • salt and pepper to taste
  • 1 hand fullish fresh spinach (optional)
  • 4-6 slices provolone cheese

Directions

  1. Put chicken breasts in a spritzed 8×8 or 9×9 (just the right size to hold the meat, with not a lot of spare room)
  2. Heat cream cheese to make it stirrable. Add the rest of the ingredients and mix well.
  3. Spread evenly over the chicken.
  4. Bake for 40-45 mins at 350.
  5. Put provolone on top and cook until melted.
