Quick way to get a perfect filet
Ingredients
- 2 Tbsp high-temperature oil (avocado, grapeseed, etc.)
- 4 medium filets
- Kosher salt
- Fresh ground black pepper
- 4 Tbsp butter
- 1 Tbsp rosemary
Directions
- Preheat oven to 400F. Heat a skillet over medium-high heat with oil. Season steak with salt and pepper (both sides). When oil is about to smoke, add steak. Cook until well seared, about 5 min, flip and add butter and rosemary. Baste with butter and cook another 3-5 minutes.
- Put meat into oven and cook to your preferred temperature.
- Remove meat from pan and rest for 5 minutes
Optional: Salt meat up to 48hrs in advance for additional flavor
