Oven BBQ Short Ribs

Ingredients

  • 6 lbs bone-in short ribs (4-5 inches in length)
  • 4 cups water
  • 3/4 cup BBQ sauce (your choice)
  • 2.5 Tsp salt, divided
  • 1/4 cup liquid smoke
  • 1/2 Tsp additional liquid smoke
  • 1/4 cup Worcestershire sauce
  • 5 Tbsp packed brown sugar, divided
  • 2 Tsp black pepper
  • 1/4 Tsp ground cloves
  • 2 Tsp chili powder
  • 1/4 Tsp cayenne pepper (optional)

Directions

  1. Adjust oven rack to middle position and heat to 300F. Bring water, 1/4 cup BBQ sauce, 1/4 cup liquid smoke, Worcestershire sauce, 3 Tbsp sugar, 1 Tsp salt, and cloves to boil in medium saucepan. Remove from heat once boiling.
  2. Arrange rigs meat side down in large roasting pan. Pour hot water mix over ribs, wrap pan tightly in aluminum foil and transfer to oven. Roast until ribs can be easily pierced with paring knife (about 3hrs).
  3. Remove pan from oven, increase heat to 425F. Line rimmed baking sheet with foil. Combine remaining 1/2 cup BBQ sauce, 1/2 tsp liquid smoke in a bowl. In a separate bowl, combine chili powder, cayenne, 2 tsp pepper, 1.25 tsp salt and 2 tbsp sugar.
  4. Place ribs meat side up on prepared sheet. Brush liberally with BBQ sauce and sprinkle with spice mixture. Roast until ribs are crispy dark brown (~30 minutes). Let ribs rest for ~15 minutes then serve.
