Beanless Chili

Nice low carb chili.

Ingredients

Spice Blend
  • 1/2 cup chili powder
  • 1/8 cup salt
  • 1/8 cup ground cumin
  • 1 tbsp paprika
  • 1 tsp black pepper
  • 1 tsp garlic powder
  • 1 tsp cayenne pepper
Chili
  • 4 lbs. ground chuck
  • 3 1/4 cups water
  • 16 oz can peeled whole tomatoes, blended smooth (less sugar)
  • 1 yellow onion, chopped
  • 1 tbsp cooking oil

Directions

  1. Heat a 6-quart stock pot over medium heat. Place meat into the stock pot and cook until the meat is browned. Drain.
  2. While meat is browning combine spice blend, 3 1/4 cups of water, and blended tomatoes in the bowl. Stir until well mixed.
  3. Add chili seasoning liquid to the browned meat. Stir well and bring to a boil.
  4. Sauté onions in 1 tablespoon of cooking oil over medium heat in a skillet until the onions are translucent. Add the onions to the chili.
  5. Reduce the chili to low and simmer for one hour stirring every 15 minutes.
