Apple Cider

Great apple cider with an apple butter option

Ingredients

  • 10 medium apples quartered
  • 3/4 cup sugar
  • 1 Tbsp cinnamon
  • 1 Tbsp allspice

Directions

  1. Place apples in a large stockpot and add enough water cover by at least 2 inches. Stir in sugar, cinnamon, and allspice. Bring to a boil. Boil, uncovered, for 1 hour. Cover pot, reduce heat, and simmer for 2 hours.
  2. Strain apple mixture through a fine mesh sieve. Discard solids. Drain cider again through a cheesecloth lined sieve. Refrigerate until cold.

Optional (apple butter) – using the remains of the apples

  1. Be sure not to include seeds/stems
  2. Add 2/3 cup brown sugar, 2/3 cup white sugar, a tsp of salt, ground cloves, nutmeg and more cinnamon and cooked with a lid for three hours and without a lid for another hour and a half.
  3. Use an immersion blender to blend in the apple skins and get four cups yield
