Greek Souvlaki Marinade

This recipe serves 4 and can easily doubled

Ingredients

  • 1 pound meat cubed (lamb, chicken or pork)
  • 1/3 cup olive oil
  • 1 lemon, juiced
  • 4 garlic cloves, minced
  • 1 Tbsp oregano
  • 1 1/2 tsp salt
  • 1 1/2 tsp black pepper, freshly ground
  • 1 tsp paprika (only use paprika for chicken or lamb marinade)

Directions

  1. Make the marinade by mixing together all the ingredients, except the meat. Add meat and marinate to a Zip-Lock bag, mix well and place in refrigerator for 2+ hours
  2. Set grill to medium high heat.
  3. Thread the meat onto wooden skewers.
  4. Place the skewers on the grill and cook a couple minutes and then flip.
  5. Serve with Greek salad, tzatziki and pita bread.
