Crispy skinned baked potato
Ingredients
- 4 Russet potatoes
- 2 tbsp salt
- 1/2 cup water
- 1 tbsp vegetable oil (duck fat, bacon fat, etc. are other options)
Directions
- Adjust oven rack to the middle position and preheat oven to 450 F
- Poke each potato 6 times with a fork (all around it)
- In a medium bowl, mix salt with 1/2 Cup water
- Brine the potatoes in the saltwater mix coating the entire potato and set on a baking sheet with a wire rack
- Put the potatoes in the oven until internal temp is between 205-212 F (approx. 45-60 minutes)
- When temperature is reached, remove the potatoes and brush with vegetable oil
- Put back into the oven for 10 minutes
- When finished, take out of the oven and immediately cut an ‘X’ into the top and serve
