Cannoli filling

My favorite version of this filling that also makes a great dip

Ingredients

  • 2 cups ricotta cheese
  • 1 cup powdered sugar
  • 1/2 cup mini chocolate chips (or to taste)
  • 1.5 Tsp vanilla extract

Directions

  1. Using a spoon, put the ricotta, in spoonfuls, in a fine mesh strainer and put in refrigerator to drain for 12 – 24 hours. It should look dry when done
  2. Put the ricotta in a large bowl and mix until smooth
  3. Add the powdered sugar to the ricotta in several steps, mixing until smooth between each step
  4. Mix in the vanilla extract and chocolate chips until smooth

Serve right away or refrigerate until needed.
