My favorite version of this filling that also makes a great dip
Ingredients
- 2 cups ricotta cheese
- 1 cup powdered sugar
- 1/2 cup mini chocolate chips (or to taste)
- 1.5 Tsp vanilla extract
Directions
- Using a spoon, put the ricotta, in spoonfuls, in a fine mesh strainer and put in refrigerator to drain for 12 – 24 hours. It should look dry when done
- Put the ricotta in a large bowl and mix until smooth
- Add the powdered sugar to the ricotta in several steps, mixing until smooth between each step
- Mix in the vanilla extract and chocolate chips until smooth
Serve right away or refrigerate until needed.
