Slow Cooker Chicken Burrito Bowl

This dish can be served in a bowl or wrapped in a big soft tortilla for homemade burritos.

Ingredients

  • 1 lb. boneless, skinless chicken breasts
  • 2 Tbsp olive oil
  • 3 Tsp onion powder
  • 2 Tsp garlic powder
  • 3 Tsp chili powder
  • 2 Tsp cumin
  • Salt & Pepper to taste
  • 3 Cups low-sodium chicken broth
  • 1 15 oz. can diced tomatoes, drained
  • 1 14 oz. can black beans, drained and rinsed
  • 2 3/4 Cups instant whole grain brown rice
  • Optional: shredded jack cheese, green onions, avocado, sour cream

Directions

  1. Place chicken breasts in slow cooker
  2. Pour chicken broth over chicken and stir in tomatoes, olive oil, onion powder, garlic powder, chili powder, cumin, salt and pepper
  3. Cook on low for 4 hours
  4. Remove chicken from slow cooker
  5. Turn slow cooker to high and stir in instant rice and black beans; Cook for 30 minutes
  6. While rice and beans cook, cut chicken breasts into cubes (or shred)
  7. Add chicken back in and cook for 20 min. or until chicken is warm
  8. Serve with fresh diced tomatoes, green onions, avocados, etc.
