Ingredients
- 10 oz. ground pork
- 3/4 cup sushi rice
- 2 scallions
- 1 head butter lettuce
- 1 red onion
- 1 oz pea shoots
- 1 large bunch mint (optional)
- 1/4 cup breadcrumbs
- 1/4 cup rice vinegar
- 1/4 cup soy glaze
- 1 tsp white sesame seeds
- .5 tsp garlic powder
- .5 tsp ginger powder
- .5 tsp coriander powder
- .5 tsp lemongrass powder
Directions
- Cook the rice
- Cut off and discard the root ends of the scallions; thinly slice and separate the white bottoms from green tops
- Cut off and discard the rood end of the lettuce and separate the leaves
- Peel and small dice half the onion and thinly slice the other half
- Place the sliced onion in a small bowl with half the vinegar
- In a separate bowl, combine the soy glaze and remaining vinegar; season with salt and pepper (sauce)
- Heat 2 tsp of olive oil until hot and add diced onion, white bottoms of scallions and powdered spices and cook for 1-2 minutes and transfer to a medium bowl
- Add the pork and breadcrumbs to the bowl of spices and roll into 16 equal size meatballs
- Heat 2 tsp of olive oil and cook the meatballs for 4-6 minutes; add 1/4 of the sauce and 1/4 cup water and salt and pepper and cook until slightly reduced
- Place lettuce leaves on 2 plates and put meatballs in leaves and top with sliced onion
- Place a small bowl in each place with divided remaining sauce
