This recipe serves 2 but can be easily increased to serve more.
Ingredients
- 1/3 cup white Basmati rice
- 1 Zucchini
- 1.5 cloves of garlic
- Juice from 1/2 lime
Directions
- In a large pot, heat 2 teaspoons of olive oil on medium-high until hot.
- Add the zucchini and garlic, season with salt and pepper. Cook, stirring occasionally, 1 to 3 minutes, or until softened and fragrant.
- Stir in the rice and 2/3 cup of water. Heat to boiling on high.
- Once boiling, cover and reduce the heat to low. Simmer 14 to 16 minutes, or until the liquid has been absorbed and the rice is tender.
- Remove from heat and stir in the juice of the remaining lime wedges, season with salt and pepper to taste.
