Pearl’s Fried Meatballs

A holiday tradition

Ingredients

  • 2 lbs. hamburger
  • 1.5 Cups Parmesan cheese
  • 1 Tbsp onion powder
  • 3 Tbsp garlic powder
  • 2 Tsp Italian seasoning
  • Salt and Pepper to taste (appx. 1tsp each)
  • 3 eggs
  • 5 slices bread
  • Pickles, peppers and/or olives diced small
  • Flour for rolling meatballs

Directions

  1. Mix first 7 ingredients (hamburger > eggs)
  2. Put bread in strainer and drench with water, the squeeze out excess water and mix into meat mixture.
  3. Add salt and pepper.
  4. If mixture is dry, add a little chicken broth.
  5. Put a piece of diced item into meatball.
  6. Roll meatballs into ~1 inch diameter balls and roll in the flour for a light coating.
  7. Fry in frying pan or deep fryer and cook until well done and a little crispy on the outside. For deep fryer, I set the temp to 370 F and fry for ~3 minutes.
  8. Taste after a couple to see if more seasoning is needed.
